Ingredients
  

  • 4 slices ciabatta or sourdough bread
  • 6 –8 slices deli turkey or leftover roasted turkey
  • 2 –4 slices mozzarella or provolone cheese
  • 3 –4 tablespoons basil pesto store-bought or homemade
  • 1 medium tomato thinly sliced (optional)
  • 1 handful fresh spinach or arugula optional
  • 1 –2 tablespoons butter or olive oil for grilling
  • Salt and black pepper optional
  • Optional Add-ins: roasted red peppers, caramelised onions, mayonnaise, balsamic glaze

Instructions
 

Step 1: Prepare the Bread

  • Lay the bread slices flat on a clean surface. Spread pesto evenly on one side of each slice.

Step 2: Layer the Ingredients

  • On two slices of bread, layer the turkey evenly. Add cheese slices on top, followed by tomato and spinach if using.

Step 3: Assemble the Sandwich

  • Place the remaining bread slices on top, pesto side down, to form sandwiches.

Step 4: Butter the Outside

  • Lightly spread butter or brush olive oil on the outer sides of the bread to ensure a crispy golden crust.

Step 5: Cook the Panini

  • Heat a panini press or skillet over medium heat.
  • Place the sandwich in the pan and press gently.
  • Cook for about 3–5 minutes per side until the bread is golden and the cheese is melted.

Step 6: Rest and Serve

  • Remove from heat and let it rest for 1–2 minutes. Slice in half and serve warm.
