Ingredients
  

For the Filling:

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 can 10 oz diced tomatoes with green chilies (undrained)
  • –2 cups shredded cheddar cheese
  • ½ cup ranch dressing

For the Base:

  • Mini phyllo shells wonton wrappers, or crescent dough

Optional Toppings:

  • Chopped cilantro
  • Green onions
  • Sour cream
  • Jalapenos
  • Salsa or guacamole

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C) and lightly grease a muffin tin or prepare a baking tray.

Step 2: Cook the Meat

  • In a skillet over medium heat, cook the ground beef until fully browned. Break it apart as it cooks and drain excess fat.

Step 3: Add Flavour

  • Stir in taco seasoning and diced tomatoes with green chilies. Simmer for 3–5 minutes until the mixture thickens and becomes flavourful.

Step 4: Make It Creamy

  • Remove from heat and mix in ranch dressing along with half of the shredded cheese. Stir until smooth and well combined.

Step 5: Prepare the Base

  • Arrange your phyllo shells, wonton cups, or dough in a muffin tin or baking sheet.

Step 6: Assemble the Bites

  • Spoon the taco-ranch mixture into each shell. Top with the remaining shredded cheese.

Step 7: Bake

  • Bake for 8–12 minutes, or until the cheese is melted and bubbly and the shells are golden and crisp.

Step 8: Garnish & Serve

  • Remove from oven, let cool slightly, then garnish with your Favourite toppings. Serve warm and enjoy!

Notes

  • Make Ahead: Prepare the filling up to 2 days in advance and refrigerate. Assemble and bake when ready.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat in the oven at 350°F for 5–7 minutes to keep them crispy.
