Ingredients

  • 1 lb 450 g lean ground beef (or turkey)
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • Salt and freshly ground black pepper to taste
  • 1 can 10–11 oz / ~300 ml condensed cream of mushroom soup
  • 1 cup milk or half milk, half broth
  • 2 cups frozen mixed vegetables peas, carrots, corn, green beans
  • 2 cups shredded cheddar cheese divided
  • 1 32-oz / ~900 g bag frozen tater tots
  • Fresh parsley or green onions chopped (for garnish)

Instructions

Step 1: Preheat Oven

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Step 2: Cook the Filling

  • In a skillet over medium-high heat, brown the ground beef. Add diced onion and cook until softened. Stir in minced garlic, Worcestershire sauce, salt, and pepper. Drain any excess fat.

Step 3: Make the Creamy Base

  • Add cream of mushroom soup and milk to the skillet. Stir until smooth. Mix in frozen vegetables until evenly coated. Simmer for 2–3 minutes, then remove from heat.

Step 4: Assemble the Casserole

  • Spread the creamy meat-vegetable mixture evenly in the baking dish. Sprinkle half of the shredded cheese over the top. Arrange tater tots in a single even layer over the filling. Finish with remaining cheese.

Step 5: Bake to Perfection

  • Bake uncovered for 35–40 minutes or until bubbling and golden. For extra crispiness, broil on high for 3–5 minutes, watching closely.

Step 6: Rest & Serve

  • Let the casserole rest for 5–10 minutes before serving. Garnish with chopped parsley or green onions for a fresh finish.

Notes

  • Make-Ahead Tip: Assemble the casserole, cover, and refrigerate up to 24 hours. Bake when ready, adding 10–15 minutes to cooking time.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to keep the top crispy.
  • Freezer Option: Freeze before baking (covered tightly). Thaw overnight in fridge, then bake as directed.
  • Variations: Swap beef for ground turkey or sausage. Add taco seasoning and pepper jack cheese for a Tex-Mex twist.
  • Use a homemade cream sauce instead of canned soup for a richer flavor.
