Ingredients
  

  • 4 boneless skinless chicken breasts (about 150–180g each)
  • 2 teaspoons olive oil
  • Seasoning Mix:
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano or thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder optional
  • 1 tablespoon brown sugar optional, for caramelised flavour
  • Optional Garnish:
  • Fresh parsley chopped
  • Lemon wedges

Step 1: Preheat the Oven

  • Preheat your oven to 400–425°F (200–220°C). A higher temperature helps seal in juices and create a golden exterior.

Step 2: Prepare the Chicken

  • Pat the chicken breasts dry using paper towels. This helps the seasoning stick and improves browning.

Step 3: Even Out Thickness

  • Gently pound the thicker parts of the chicken to create an even thickness. This ensures uniform cooking and prevents dryness.

Step 4: Season the Chicken

  • In a small bowl, mix all seasoning ingredients.
  • Rub olive oil over both sides of the chicken, then evenly coat with the seasoning mixture.

Step 5: Arrange for Baking

  • Place the chicken breasts on a lined baking tray or lightly greased dish. Ensure they are not overcrowded.

Step 6: Bake

  • Bake for 18–25 minutes, depending on thickness, until the internal temperature reaches 165°F (75°C)

Step 7: Rest the Chicken

  • Remove from oven and let the chicken rest for 5 minutes. This helps retain juices and improves tenderness.

Step 8: Serve
