Ingredients

  • 1 tablespoon unsalted butter
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1 egg yolk or 1 tablespoon milk for eggless option
  • 3 tablespoons all-purpose flour
  • 1 –2 tablespoons chocolate chips
  • Optional: chopped nuts or caramel pieces

Instructions

Step 1: Melt the Butter

  • Place the butter in a microwave-safe mug and microwave for 15–25 seconds until melted.

Step 2: Mix Sugars & Flavouring

  • Add granulated sugar, brown sugar, vanilla extract, and salt. Stir until smooth and well combined.

Step 3: Add Egg Yolk

  • Mix in the egg yolk thoroughly until the mixture becomes creamy.

Step 4: Add Dry Ingredients

  • Stir in the flour gently until just combined. Avoid over mixing.

Step 5: Fold in Chocolate Chips

  • Add chocolate chips (and optional nuts) and mix lightly.

Step 6: Microwave the Cookie

  • Microwave on high for 40–60 seconds, depending on your microwave wattage. The cookie should look set but slightly soft in the center

Step 7: Cool & Serve

  • Let the cookie cool for 1–2 minutes before enjoying. This helps it set and improves texture.

Notes

  • Do not overcook: Overcooking can make the cookie dry or rubbery. It continues cooking after removal.
  • Microwave variation: Cooking time may vary based on wattage—start low and adjust.
  • Egg substitute: Use milk or yogurt for an eggless version.
  • Texture tip: Slightly under cooked center = gooey cookie perfection.
  • Storage: Best eaten fresh, but can be stored for up to 1–2 days and reheated for 10–15 seconds.
  • Flavour variations: Add peanut butter, cocoa powder, oats, or caramel for different versions.
