Ingredients

Main Ingredients:

  • 6 large eggs
  • 2 tablespoons milk or cream
  • 1 cup shredded cheese cheddar, mozzarella, or your choice
  • 1/2 cup cooked breakfast sausage bacon, or diced ham
  • 6 slices bread / 2 large tortillas / 1 sheet puff pastry
  • 1/4 cup diced bell peppers
  • 2 tablespoons chopped green onions
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon butter or oil for cooking/greasing

Optional Add-ins:

  • Spinach chopped
  • Mushrooms sauteed
  • Cherry tomatoes
  • Garlic powder or paprika
  • Red pepper flakes

For Serving:

  • Salsa
  • Ketchup
  • Hot sauce
  • Sour cream

Instructions

Step 1: Prepare the Filling

  • Cook sausage or bacon in a skillet until fully done. If using vegetables, saute them lightly to remove excess moisture. This helps avoid soggy finger foods.

Step 2: Whisk the Eggs

  • In a bowl, whisk together eggs, milk, salt, and pepper until smooth and slightly frothy.

Step 3: Cook the Eggs

  • Heat a pan over medium-low heat with a little butter or oil. Pour in the egg mixture and cook gently, stirring occasionally, until soft and slightly under cooked.

Step 4: Combine Ingredients

  • Add cooked meat, vegetables, and shredded cheese into the eggs. Mix gently until well combined.

Step 5: Prepare the Base

  • Bread: Cut into strips or squares
  • Tortillas: Lay flat for rolling
  • Puff pastry: Cut into rectangles or squares

Step 6: Assemble

  • Place a small portion of filling onto each base. Roll, fold, or shape into bite-sized pieces.

Step 7: Bake

  • Preheat oven to 375°F (190°C). Arrange pieces on a lined baking tray and bake for 12–18 minutes until golden and heated through.

Step 8: Cool & Serve

  • Let cool for 3–5 minutes before serving. Serve warm with your favourite dips.

Notes

  • Make Ahead: Prepare filling the night before and assemble in the morning.
  • Storage: Store in an airtight container in the refrigerator for up to 3 days.
  • Freezing: Freeze individually wrapped portions for up to 1 month.
  • Reheating: Reheat in oven or toaster oven for best texture.
  • Tip: Slightly under cook eggs initially to keep them soft after baking.
  • Variation: Try sweet versions like French toast sticks or pancake bites for variety
  • Meal Prep Friendly: Finger foods are ideal for busy mornings since they are portable and easy to eat without utensils
