Ingredients

For the Beef Marinade:

  • 500 g flank steak or sirloin thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp black pepper
  • 1 tbsp oil

For the Stir-Fry:

  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 2 tbsp cooking oil

For the Sauce:

  • ¼ cup soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp sugar
  • ½ cup beef broth or water
  • 1 tsp cornstarch mixed with water for slurry
  • These ingredients create the classic balance of savory slightly sweet, and peppery flavours that define pepper steak.

Instructions

Step 1: Prepare the Beef

  • Slice the beef thinly against the grain. This ensures the meat stays tender after cooking.

Step 2: Marinate

  • In a bowl, mix beef with soy sauce, cornstarch, oil, and black pepper.
  • Let it marinate for 20–30 minutes.
  • This helps lock in moisture and improves texture during high-heat cooking.

Step 3: Prepare Ingredients

  • Slice all vegetables evenly and mix the sauce ingredients in a separate bowl.
  • Stir-frying moves quickly, so having everything ready is essential.

Step 4: Cook the Beef

  • Heat a wok or pan over high heat.
  • Add oil and cook the beef in batches for 2–3 minutes until browned.
  • Remove and set aside.

Step 5: Stir-Fry Vegetables

  • In the same pan, add a little oil and stir-fry onions and bell peppers for 2–3 minutes until crisp-tender.

Step 6: Add Aromatics

  • Add garlic and ginger. Cook for about 30 seconds until fragrant.

Step 7: Combine and Add Sauce

  • Return beef to the pan.
  • Pour in the sauce mixture and stir well.
  • Let it simmer for 2–3 minutes until the sauce thickens and coats everything evenly.

Step 8: Final Touch

  • Taste and adjust seasoning if needed.
  • Serve immediately for best flavour and texture.

Notes

  • Best Cut of Beef: Flank steak or sirloin works best for tenderness and flavour.
  • High Heat is Key: Cooking on high heat prevents steaming and keeps vegetables crisp.
  • Do Not Overcook: Beef cooks quickly—overcooking makes it tough.
  • Storage: Store in an airtight container in the refrigerator for up to 3 days.
  • Reheating Tip: Reheat in a pan with a splash of water or broth to keep the sauce smooth.
  • Variations:
    Add chili flakes for spice
Use mushrooms or tofu for a vegetarian version
Add sesame oil for extra aroma
