  • ¼ cup finely chopped red onion

For Sandwich Assembly:

  • 8 slices of bread white, whole grain, or sourdough
  • Fresh lettuce leaves
  • Tomato slices optional
  • Butter or mayonnaise optional spread

Instructions
 

Step 1: Prepare the Chicken

  • Cook chicken (boiled, roasted, or rotisserie) and allow it to cool completely. Shred or finely chop into bite-sized pieces.

Step 2: Make the Dressing

  • In a bowl, combine mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until smooth and creamy.

Step 3: Mix the Filling

  • Add shredded chicken, chopped celery, and red onion into the dressing. Stir gently until everything is evenly coated.

Step 4: Chill the Mixture

  • Cover and refrigerate the chicken mixture for 20–30 minutes to enhance flavour.

Step 5: Assemble the Sandwich

  • Lay out bread slices and spread butter or mayo if desired. Add lettuce leaves, then spoon the chicken mixture evenly over the bread. Top with tomato slices if using.

Step 6: Finish and Serve

  • Place the second slice of bread on top, press gently, slice diagonally, and serve chilled.
