  • 3 medium firm ripe bananas
  • 1 tablespoon melted coconut oil or light olive oil
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 pinch sea salt optional
  • ½ teaspoon vanilla extract optional

Step 1: Prepare Oven

  • Preheat oven to 225°F (107°C). Line a baking sheet with parchment paper.

Step 2: Slice Bananas

  • Peel bananas and slice them into thin, even rounds about 1/8-inch thick for crispier chips.

Step 3: Make Cinnamon Sugar Mix

  • In a small bowl, combine sugar, cinnamon, and optional pinch of salt.

Step 4: Coat Banana Slices

  • Lightly brush or toss banana slices with melted coconut oil. Sprinkle cinnamon sugar mixture evenly over slices, coating both sides lightly.

Step 5: Arrange on Baking Sheet

  • Place banana slices in a single layer on the prepared baking sheet, making sure they do not overlap.

Step 6: Bake

  • Bake for 35–40 minutes, then carefully flip each slice.

Step 7: Continue Baking

  • Bake another 30–40 minutes, or until chips are golden and dry around the edges.

Step 8: Cool and Crisp

  • Remove from oven and let chips cool completely. They will continue to crisp as they cool.

Step 9: Serve or Store

  • Enjoy immediately or transfer to an airtight container for storage.

  • For extra crisp chips: Slice bananas very thin and bake a little longer.
