Ingredients

For the Roll Ups:

  • 10 –12 slices soft sandwich bread crusts removed
  • 2 –3 large eggs
  • ½ cup milk or cream for richer flavour
  • 1 –2 tbsp sugar
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 2 –3 tbsp butter for frying

Filling Options (Choose or Combine):

  • Cream cheese softened
  • Fresh strawberries or mixed berries
  • Nutella or chocolate spread
  • Peanut butter
  • Banana slices
  • Jam or fruit preserves

Optional Toppings:

  • Cinnamon sugar
  • Powdered sugar
  • Maple syrup
  • Honey or whipped cream

Instructions

Step 1: Prepare the Bread

  • Cut off the crusts from each slice of bread and flatten them using a rolling pin until thin and flexible.

Step 2: Add Filling

  • Spread a thin layer of your desired filling (cream cheese, Nutella, etc.) and add fruits if using. Roll each slice tightly into a log shape.

Step 3: Make Egg Mixture

  • In a bowl, whisk together eggs, milk, sugar, cinnamon, and vanilla extract until well combined.

Step 4: Dip the Roll Ups

  • Lightly dip each roll into the egg mixture, ensuring even coating without soaking too long.

Step 5: Cook the Roll Ups

  • Heat butter in a skillet over medium heat. Place roll-ups seam-side down and cook until golden brown on all sides (about 2–3 minutes per side).

Step 6: Add Final Touches

  • Remove from pan and roll in cinnamon sugar or dust with powdered sugar. Serve warm with syrup or toppings of choice.

Notes

  • Do not overfill the bread to prevent leaking while cooking.
  • Use medium heat to avoid burning the outside before the inside cooks.
  • Best served fresh, but can be refrigerated for up to 2 days.
  • Reheat in a skillet or oven to maintain crispiness.
  • You can freeze uncooked or cooked roll-ups for later use.
  • Try savory variations like eggs, cheese, and ham for a different twist.
